Ingredients
For the beans:
2 tbsp olive oil
1x onion, diced
1x 420g tinned 4 bean mix
1x 420g tinned tomatoes
1x 420g corn kernels
1/2 a packet of @mingleseasoning Mexican Fiesta Spice Blend
Salt & pepper
Other:
1 cup cup brown rice
1 avocado
1 cucumber, sliced
Handful of spinach
Feta, to sprinkle on top
Preparation
1. Heat your olive oil on a medium fry pan & sauté your onion until golden.
2. Add your 4 bean mix, tinned tomatoes, corn kernels, spice mix, and salt & pepper to the pan & stir well.
3. Allow to simmer on high heat for 10 minutes, then turn down to low & simmer for another 30 mins stirring frequently.
4. Prepare all other ingredients in a bowl. Add your spice mix. Mix together and enjoy!
