Vegetarian Mexican Stuffed Capsicums

About the Recipe

These juicy capsicums are from @seasonalpathau which ensures they are coming only from the best - fresh, seasonal produce direct from the farm - all organic and delicious! This dish is a bright and tasty way to serve up one of our favourite vegetables!

Ingredients

1 onion, diced


2 garlic cloves, diced


1 tsp turmeric


1/2 tsp ground cumin


1/2 tsp oregano leaves


1/3 cup cooked quinoa


1 tin black beans drained and rinsed


1 tin crushed tomatoes


Handful of spinach


Lemon juice


2 large capsicums (seeds + membrane removed)


Goats cheese, to taste

Preparation

Cook onions in a saucepan in oil until soft. Add in garlic, turmeric, oregano + cumin and stir for another few minutes.


Add in the cooked quinoa, black beans, tomatoes + spinach and cook for 5-10 minutes on medium heat. Season with lots of salt and pepper and lemon juice.


Spoon mixture into each capsicum and place onto lined baking dish. Bake for 10 mins with foil ON, then another 20 minutes with foil OFF on 160°C.


Top with goats cheese and lemon juice and ENJOY!
