About the Recipe
Made from cashews and organic, clean ingredients who wouldn’t want to make these?! Seriously guys this one is definitely worth it.
Ingredients
BASE:
1 + 1/4 cup almonds
6 large pitted dates
1 teaspoon vanilla essence
1 teaspoon cinnamon
FILLING:
2 cups raw cashews (soaked overnight)* (SEE NOTES)
1/2 cup melted coconut oil
Zest and juice of two large lemons
2 tbsps maple syrup
300g blueberries
Preparation
Step 1
Pulse base ingredients in a food processor and transfer to a lined square baking tin.
Step 2
Place filling ingredients into a food processor for about 4 minutes until smooth and creamy.
Step 3
Pour over base layer and cover evenly with a knife.
Step 4
Scatter blueberries on top and freeze for 2-3 hours!
