About the Recipe
An old childhood favourite brought back out with a healthier version! I’m not sure about anybody else but one of my fondest childhood memories is making these cookies and sprinkling the hundreds of thousands and chocolate on top. Experiment with the toppings with these bad boys and let us know how you go!
Ingredients
DRY:
1.5 cups almond meal
1 cup oat flour
1/3 cup desiccated coconut
Cinnamon
1 tsp baking soda
Salt
WET:
1/4 cup runny tahini
1/4 cup melted coconut oil
1/4 cup almond milk
2 tbsp almond butter
1/4 cup maple syrup
TOP WITH:
Choc buttons or other suggestions are:
- raspberry jam
- 100s of 1000s
- chocolate
Preparation
Mix dry ingredients in a bowl.
In a separate bowl, mix wet ingredients.
Mix wet to dry until combined.
Roll into balls and slightly press down on a lined baking tray. Make a small print with your thumb in the middle of each cookie to resemble a circle or ‘thumb’. (Eg. A dent in the centre)
Fill each thumbprint cookie with one chocolate button (or whatever you like).
Bake for 20-25 mins on 180°C or until golden.
