These incredible vegan, gluten free bars are the perfect snack or late night indulgence. They are also packed with omega 3s thanks to chia seeds and flaxseed meal, which are wonderful fatty acids for your brain, heart and immune system!
Keep these bad boys in the freezer or fridge, if there are any left after the first day.
1 cup peanut butter
1 cup medjool dates
1 tsp vanilla extract
1 tbsp chia seeds
1 tbsp flaxseed meal
1 cup oats
3/4 cup cacao powder
1/3 cup coconut oil
1 tbsp water
Add peanut butter, dates, vanilla, chia and flaxseed meal to a bowl of a food processor and pulse until combined.
Add in oats and pulse until oats are somewhat mixed through.
Press peanut butter oat mixture into lined baking loaf pan.
Melt the cacao powder, coconut oil and water on a saucepan over low heat until smooth.
Pour the chocolate over the peanut butter and tilt the pan so it covers the peanut butter layer entirely.
Sprinkle with salt, and place in freezer and allow to set for a few hours.
