Looking for a quick, healthy and delicious dinner idea? Then we’ve got you covered! This Satay Chicken Noodle Salad is packed full of vegetables, protein and noodles to leave you feeling satisfied. The homemade Satay Sauce is also a game changer! We hope you enjoy as much as we did.


For the salad:

1x cucumber, grated

1x zucchini, grated

1x carrot, grated

1x broccoli florets, steamed

1/2 a red onion, finely sliced

1 red chilli, sliced

1 pack Vermicelli Rice Noodles

2 chicken breasts, sliced

2 handfuls of spinach

For the satay sauce:

1/4 cup peanut butter

2 tbsp soy sauce

2 tbsp sesame oil

1-2 tbsp honey

For the toppings:

Crispy shallots

Extra satay sauce


Coconut aminos salad dressing

Salt & Pepper


Make your satay sauce. Whisk together all the ‘satay sauce’ ingredients until you have a smooth consistency. Add more or less of each ingredients depending on your tastebuds. Set aside.

Cook your broccoli and prepare all other vegetables so that they are ready to be added into the salad.

Cook your noodles as per the pack.

Next, marinate your chicken with half the amount of satay sauce. I marinate it in a bowl and use my hands to ensure it is mixed through evenly. Cook your chicken on a pan with a touch of olive oil until cooked through.

Now, prepare your salad!

Add the spinach, then cooked noodles, chicken, broccoli, carrot, cucumber, zucchini, red onion and chilli.

Add the coconut aminos salad dressing and salt & pepper and mix well.

Top with your leftover satay sauce and crispy shallots.
