About the Recipe

This Salmon & Peanut Tofu Salad is a refreshing and healthy dish that combines protein-rich salmon and tofu with a variety of vegetables, such as lettuce, cucumber, and carrots, and a flavorful peanut dressing.

Ingredients

Mixed leaves


1 salmon breast (wild caught), oven roasted


1 broccoli, cut into florets, oven roasted


1 cucumber, diced


1/2 pack firm tofu


1/2 an avo, sliced


1/2 cup brown rice, cooked


Sesame seeds, to serve


Sriracha, to serve



For the satay sauce:


1/4 cup peanut butter


1-2 tbsp soy sauce


2 tbsp sesame oil


1-2 tbsp honey


1 garlic clove, diced

Preparation

1. Make your peanut satay marinade. Pour the marinade over the tofu and let it sit for an hour. Cook the tofu in the oven for 40 mins or until crispy on 180°c.


2. Bake your salmon and broccoli in the oven for 20 mins on 180°C in olive oil and salt.


3. Add all other ingredients to a bowl, then add the salmon, tofu and broccoli.


4. Top with sesame seeds and any extra peanut dressing.
