Raspberry Muffins

About the Recipe

The most perfect, soft and sweet muffins with a slight tang from the raspberries. If you are looking for an afternoon snack - we highly recommend giving these a go!

Ingredients

DRY:

1 cup almond meal

1 cup oat flour

2 tsp baking soda

1 tsp cinnamon

Pinch of salt


WET:

2 eggs slightly whisked

1/3 cup maple syrup

1 teaspoon vanilla extract

1/2 cup almond milk

1 tbsp olive oil

1 tbsp Apple cider vinegar

1 cup frozen raspberries

Preparation

Combine dry ingredients in a bowl.


Combine wet ingredients (except raspberries) in a seperate bowl.


Mix dry ingredients to wet and stir until just combined.


Mix through raspberries.


Bake for 25 mins on 180°C.
