About the Recipe

This Peanut vegetable curry is a delicious and nutritious meal that is perfect for a hearty dinner. To make this dish, start by heating a tablespoon of oil in a large pot over medium heat. Add in your choice of vegetables, such as diced bell peppers, onions, carrots, and zucchini. Sauté the vegetables until they are tender, about 5-7 minutes. Next, add in a can of coconut milk, a few tablespoons of peanut butter, and your preferred spices such as curry powder, cumin, and turmeric. Stir everything together until the peanut butter is fully incorporated and the sauce is smooth. Bring the curry to a simmer and let it cook for an additional 5-10 minutes, or until the vegetables are fully cooked and the sauce has thickened. Serve the peanut vegetable curry over rice or with a side of naan bread and enjoy! The combination of the creamy peanut sauce and the tender vegetables makes for a satisfying and flavorful meal.
