Nourishing Chicken Vegetable Soup

About the Recipe

This soup is full of goodness and flavour, and it’s super filling too! I’m not sure about you but there’s nothing I like more than sipping on a hot bowl of soup on a cold winters night 🤍 Try this one out for yourself and let us know how you go!

Ingredients

2 chicken breasts


1x onion chopped


2-3x garlic, chopped


4 carrots , sliced


4 large celery sticks


2-3 potatoes , peeled


A few sprigs fresh thyme


2 large handfuls peas


1 leek , washed and shredded

Preparation

Place the chicken, carrots, onion, garlic, celery, potatoes and thyme into a large, deep pan and pour in enough water to cover the chicken.


Simmer on a medium heat for 30 minutes until the chicken is cooked through. Remove chicken breast and allow vegetables and broth to simmer for another hour.


Cut cooked chicken breast into long chunks.


Add in peas, leeks and chicken. Simmer for a further 5 minutes, then remove the sprigs of thyme.


Serve with chopped parsley and cheese.
