About the Recipe
This may be the easiest, healthiest soup I have made to date! If you're looking for a filling, nutritious, and easy to make recipe for lunch or dinner then my Broccoli & Leek Soup is the way to go! Seriously - this has become my go-to soup when I'm in need of something quick but also packed full of flavour. Not only does it taste delicious, but this creamy vegan and gluten-free dish will leave you feeling satisfied without too many carbs or fats. Plus, it makes use of the nutritional powerhouse vegetable broccoli, which is packed full of vitamins A & C, minerals, fibre, and antioxidants that supports our immune system plus calcium from the leeks which helps us maintain healthy bones. Ingredients
1x onion roughly chopped
2x garlic cloves roughly chopped
1x leek roughly chopped
2x broccoli cut into florets
1L vegetable stock
Salt + Pepper
Preparation
Sauté onion, garlic and leek in a large saucepan in olive oil until the leek becomes golden.
Add broccoli and stock and bring to the boil. (This should take about 15-20 mins).
One the broccoli is soft, use a stick blender to finely purée the mixture. Season with salt and pepper.
Serve with extra olive oil, Parmesan, crushed walnuts and chilli flakes.
