Ingredients
2 wild caught salmon fillets
1 spring onion, diced
2 garlic cloves, diced
1 zucchini, chopped
1 baby bok choy, chopped
1 broccoli, cut into florets
1 packet mushrooms
1 serving soba noodles
2 tbsp soy sauce
1 tbsp sesame oil
Sesame seeds, to serve
For the miso paste:
1 tbsp sesame oil
1 tbsp soy sauce
1 tbsp honey
2 tbsp white miso paste
1 tbsp sesame seeds
1 tsp water
1cm finely grated ginger
Preparation
1. Make your miso dressing by whisking all miso paste ingredients together in a bowl.
2. Pour half the miso dressing over the salmon fillets. Allow to marinate for 10 mins.
3. Heat sesame oil on a fry pan and add your spring onion, garlic and zucchini and cook for 3 minutes.
4. Whilst the veges cook, add your salmon to the oven and bake for 18 minutes on 180°C.
5. Add your mushrooms, broccoli, bok choy and 2 tbsp soy sauce to the fry pan and continue cooking until the veges are soft.
6. Cook your soba noodles as per the packet instructions. Once cooked, pour into the stir fry, and add the rest of the miso dressing.
7. Stir everything together.
8. Now it’s time to plate up everything! Add the stir fry to two bowls, then add the salmon on top. Top with extra sesame seeds & salt and pepper.
