About the Recipe
These scones are the perfect snack or on-the-go breakfast. We made use of @mountsomers ‘Honey + Vanilla’ 100% pure New Zealand honey. It is UMF certified, meaning it’s the highest quality honey. It is also naturally dairy free and refined sugar free! These scones are simple to bake and taste absolutely delicious💛
3 cups almond flour
1 tsp baking soda
Pinch of cinnamon
1/2 cup roughly chopped dates
1/3 cup slightly melted coconut oil
1/2 cup almond milk
1 tsp vanilla extract
1-3 tbsp honey
1 cup oats
In a bowl combine almond flour, cinnamon, and baking soda.
Add in the coconut oil and mix softly with your hands until a crumbly texture forms.
Add in dates and mix.
In a seperate bowl, mix together milk, honey + vanilla extract, then pour into dry ingredients and combine with fingers. If mixture is too wet, add more almond flour. If it is too dry, add more milk.
Sprinkle 1/2 cup oats on a surface and place dough on top. Sprinkle rest of oats on top.
Flatten until about 5cm thick. Form into scone shapes and bake for 25-30 mins on 160° or until golden.
