Homemade Scones

About the Recipe

This is a super easy recipe for a laid-back Sunday morning. Don’t feel like going to the shops? Well then whip these bad boys up in less than 40 minutes. Using greek yoghurt and whole-wheat flour, the ingredients are basic and minimal but taste like a dream! I paired mine with butter and strawberry jam. 😊

Ingredients

1.5 cups whole wheat flour

1.5 tsp baking powder

Pinch of cinnamon

Pinch of salt

2 tbsp olive oil

2 tbsp honey

1 tsp vanilla extract

1/2 cup greek yoghurt

3 tbsp almond milk (plus extra for brushing)

Preparation

Place the flour, baking powder, cinnamon and salt in a bowl and whisk until combined.

Form a circle in the centre and add in the olive oil, honey, greek yoghurt, vanilla and almond milk.

Mix well with a spatula until combined, and then mix with your hands.

Place the dough on a flat surface with some extra flour and roll out evenly with a rolling pin. The dough should be about 4cm thick.

Using a cookie or scone cutter (or even the top of a glass jar), make circular shaped scones. Place onto lined baking tray and brush with some milk.

Bake in the oven for 20-25 minutes on 180*C or until golden brown.
