Bringing you all exactly what you need to start the week. These require no baking time - simply just stick them in the freezer and they are ready to go! The texture is literally the exact same as a lamington and they taste even better than the store bought ones without the added sugar. ENJOY 🔥
1.5 cups almond meal
1/4 cup desiccated coconut
3 tbsp maple syrup
3 tbsp melted coconut oil
1 tsp vanilla
1/2-1 block dark chocolate
1/2 cup desiccated coconut
Mix all base ingredients together in a bowl with a fork until well combined. If mixture is too dry, add in 1 tbsp water.
Pour into a small, lined loaf tin and put in freezer to set for 1 hour.
Cut filling into small squares.
Melt chocolate in a saucepan/microwave (I add 1 tbsp coconut oil too).
Dip the squares into the chocolate until fully coated.
Sprinkle all with a decent amount of coconut.
Place all on a plate to set in fridge for 30 mins.
Store in container in the fridge.
