About the Recipe

Bringing you all exactly what you need to start the week. These require no baking time - simply just stick them in the freezer and they are ready to go! The texture is literally the exact same as a lamington and they taste even better than the store bought ones without the added sugar. ENJOY đŸ”„



  • 1.5 cups almond meal

  • 1/4 cup desiccated coconut

  • 3 tbsp maple syrup

  • 3 tbsp melted coconut oil

  • 1 tsp vanilla


  • 1/2-1 block dark chocolate

  • 1/2 cup desiccated coconut


Step 1

Mix all base ingredients together in a bowl with a fork until well combined. If mixture is too dry, add in 1 tbsp water.

Step 2

Pour into a small, lined loaf tin and put in freezer to set for 1 hour.

Step 3

Cut filling into small squares.

Step 4

Melt chocolate in a saucepan/microwave (I add 1 tbsp coconut oil too).

Step 5

Dip the squares into the chocolate until fully coated.

Step 6

Sprinkle all with a decent amount of coconut.

Step 7

Place all on a plate to set in fridge for 30 mins.

Step 8

Store in container in the fridge.
