Simple, yet effective is what we like to say 🙃 These donuts are delish! What’s better? They literally take 20 mins to PREP & COOK! SO DAMN EASY… exactly the way we like it. Try them out for yourself this weekend
Ingredients
DRY:
1 + 1/4 cup wholemeal spelt flour
2 tsp cinnamon
1 tsp baking powder
1/4 cup coconut sugar
Salt
WET:
1 egg
1/4 cup maple syrup
1 tbsp olive oil
1 cup almond milk(or any nut milk)
1 tsp vanilla extract
COCONUT SUGAR COATING:
2 tbsp rice malt syrup
1-2 tbsp coconut oil, melted
1/4 cup coconut sugar
Generous sprinkle of cinnamon
Preparation
Whisk dry ingredients in a bowl.
In a separate bowl, whisk together wet ingredients.
Mix wet to dry and mix until just combined. Don’t over mix.
Spray your doughnut tin with olive oil spray. Add mixture to the tin/mould.
Bake for 7-8 mins on 180°C. It should come out clean on a skewer.
In the meantime, make your coconut sugar coating. Mix the rice malt syrup and coconut oil together until well combined.
Mix the coconut sugar and cinnamon in a bowl.
Pour the glaze over the doughnuts. This will make the doughnuts sticky.
Dip the sticky doughnuts in the coconut sugar & cinnamon until the top is covered on every doughnut. You could also just sprinkle the coconut sugar on top instead.
