About the Recipe
Say hello to these perfect healthy chocolate muffins. They are so moist, rich and fudgy you would never believe they are good for you! Made with almond flour and Greek yogurt you don’t even need icing on top - they are that damn good.
Ingredients
DRY:
1.5- 2 cups almond meal
1/3 cup cacao powder
1 tsp baking soda
Cinnamon
Salt
1/2 cup dark choc chips
WET:
2 eggs
1/2 cup greek yoghurt
1/3 cup maple syrup
1/3 cup almond milk
1/4 cup olive oil
1 tsp vanilla extract
Preparation
Mix dry ingredients in a bowl. Start with 1.5 cups almond meal.
Mix wet ingredients in a seperate bowl.
Mix wet to dry. If mixture is too runny add the other 1/2 cup almond meal.
Add in choc chips.
Pour batter equally into muffin tin.
Bake for 22-25 mins on 180°C.
Makes 12 muffins.
Store in fridge!
