Blueberry Muffins

About the Recipe

A staple that should be in everybody’s pantry! These muffins are sooo soft and fluffy and yummy. They are also super easy to make, and are dairy and refined sugar free. Recipe below.

Ingredients

DRY:

1 cup almond meal

1 cup oat flour

2 tsp baking soda

1 tsp cinnamon

Pinch of salt .


WET:

2 eggs slightly whisked

1/3 cup maple syrup

1 teaspoon vanilla extract

1/2 cup almond milk

1 tbsp olive oil

1 tbsp Apple cider vinegar

1 cup frozen blueberries

Preparation

Combine dry ingredients in a bowl.


Combine wet ingredients (except blueberries) in a seperate bowl.


Mix dry ingredients to wet and stir until just combined.


Mix through blueberries.


Bake for 25 mins on 180°C.
