About the Recipe

Nothing beats a freshly baked, sweet and wholesome biscuit - especially when they are dairy free, high fibre and packed full of nutrient dense ingredients My healthy Anzac cookies are a delicious and wholesome twist on the traditional Australian biscuit. To make them, you'll need to start by mixing together rolled oats, coconut, almonds, and a sweetener of your choice in a bowl. I like to use honey or maple syrup to sweeten my cookies, but you can also use coconut sugar if you prefer. Next, you'll add in some olive oil and a little bit of vanilla extract to give the cookies a rich, buttery flavor. Finally, you'll drop spoonfuls of the dough onto a baking sheet and bake the cookies until they are golden brown and slightly crispy around the edges. These healthy Anzac cookies are a great alternative to the classic version, as they are made with whole grains and natural sweeteners, making them a healthier option for those who are looking to indulge in a sweet treat.

Ingredients

1.5 cups rolled oats


1/2 cup desiccated coconut


1/2 cup chopped almonds


3 tbsp extra virgin olive oil


3 tbsp honey


1 tsp vanilla extract


1 tsp baking soda


1 tbsp water

Preparation

Process all ingredients except water in a food processor until just combined. Add in water and process again.


Form into biscuits and place on lined baking tray.


Bake for 20 mins on 160°C.
