I don’t think there is anything better than pancakes and coffee on a Sunday morning ☺️☀️These pancakes are super soft and fluffy - you would never know they were healthy.
1.5 cups oats
1 large overripe banana
1 cup almond milk
Add all ingredients into a blender and blend until a smooth batter remains. Let the batter sit for 5 minutes to thicken.*
Grease a non-stick frying pan and heat on medium. Once hot, add pancake batter, cooking the pancakes for 1-2 minutes each side or until golden.
Serve with blueberries, maple syrup & cinnamon.
*NOTE: You can also replace the milk with 2 eggs instead. Just add a small amount of water.
